【Chicken Cutlets】

*Ingredients*

2 chicken breasts , dash each salt, pepper ★1 egg, whisked, 1 tsp olive oil

cake flour, panko breadcrumbs, frying oil, as needed

Instructions

  1. Pound out with a tenderizer. Dust with salt and pepper.
  2. Combine mixture ★and stir well.
  3. Dust chicken with flour, dredge through mixture ★and coat with panko.
  4. Fry in oil heated to 170℃ (340℉)
  5. Drain off oil.
  6. Let cool then slice into easy- to eat pieces.

This rice dish is nutritionally balanced with root vegetables and lean chicken meat.This is handy for times when you don’t have enough side dishes.

【chicken, burdock and carrot rice】

*Ingredients* 300g(1 1/2 C) short-grain white rice. 200g( 7 oz) boneless chicken thigh 1/2 burdock(salsify), 1 nub ginger, ★2 tbsp each soy sauce, mirin, sake)

Recipe

1.Rinse rice and soak for about 30 minutes.

2.Dice chicken into 1/2″ cubes. Peel burdock, shave into thin slices and soak in water for 5 minutes to remove bitterness. Drain. Peel and shave carrot into thin slices. Mince ginger.

3.Combine ingredients from step 2 in a bowl. Drizzle with mixture ★and let sit for 10 minutes.

4.Drain rice and add to cooker. Add water to 2 serving marker inside cooker (2 1/2 C water if usuing a pot). Add ingredients from step 3 and cook.

5.Once done, gently stir.

Ginger Pork Bento 

This is the king of sides if you want that rice gobbled up quickly. The ginger keeps this tender after thawing.

Ginger Pork

*Ingredients*

8 slices pork loin, thinly sliced, dash salt, 1 nub ginger, olive oil, as needed,

★1 tbsp each soy sauce, mirin, 1/2 tbsp sake★

Recipe

1.Score pork. Dust with salt.

2. Grate ginger, and then rub into pork. Let sit for 10 minutes.

3.Heat oil in frying pan, and drain pork and add to pan. Once both sides are browned and pork is cooked through, add marinade from step 2 and mixture ★

4.Stir to coat.

Today’s Bento Recipe

【Neapolitan 】This is the perfect substitute for rice in bentos featuring burgers and fries.

*Ingredients*

1 block beacon, 1/2 onion, 1 green bell pepper, 180g (6 1/3 o) pasta 2 tsp olive oil, 2tsp butter 3 tbsp ketchup , 1 tsp chicken soup powder

*Recipe*

1.Slice beacon on the bias. Thinly slice onion and bell pepper.

2.Boil pasta according to pacage directions.(It’s about 10 min)

3.Heat oil in frying pan. Add butter, then beacons, onions, and bell peppers in that order and saute.

4.Add pasta to pan and saute.

5.Add ketchup and chicken soup powder stir to coat.

6.Season with salt and pepper to finish.

【Scrambled Beef】The trick is to use miso. Can also use other meat, like a chicken and pork.

*Ingredients*

300g)10 1/2 oz ground beef, 1 nub ginger ★1tbsp each soy sauce, sake, miso / 2 tbsp mirin

1. Mince ginger.

2. Add beef to a teflon pan. Place over heat and scramble until crumbled into small pellets.

3. Add mixture ★and stir to coat.

4. Once most of the liquid has boiled off and let cool.

【Rolled Omelets】Always a welcome sight in bentos even it’s just one slice(^^♪

Use special omlet pan for this recipe

*Ingredients*

2 eggs ★1tsp dash salt, sesami oil

1.Whisk eggs. Add mixture dash salt and stir well.

2.Lightly grease omlet pan. Pour in 1/3 of egg mixture and spread thinly.

3.Cook until surface begins to congeal.

4.Roll omlet from back edge toward you, then push to the back of the pan.

5.Lightly grease pan again. Repeat step 2 twice, rolling over the previous layer,creating a rolled omelet.

新学期2日目学校が火事に!!!


夜中友人からLINEが・・・「明日休校って、学校火事らしい」ボヤ程度ですんだようですが、学校はお休みでこどもたちは超退屈そうでした。

*Ingredients*

200g(7oz) ground beef, 2 green bell peppers, sesami,

2tsp soy souce, 2tsp sugur, salt and pepper to taste

1.Thinly slice bell peppers.
2.Heat olive oil in frying pan. Add ground beef and stir-fry until browned and then add bell peppers and stir-fry.
3.Add sugur, soy sauce, and salt and pepper in order and stir to coat.

【Mini Burger】

*Ingredients*

400 g (14oz) ground beef, 1/2 onion, minced, 2 tsp vegetable oil, (★1/2 egg, whisked, 3 tbsp panko breadcrumbs, 3 tbsp milk, salt, pepper to taste★)

I≪nstructions≫

  1. Heat 1 tsp oil in frying pan and saute onions. Once tender, spread out onions on a baking sheet and let cool.
  2. Add ground beef to a bowl and knead. Add onions and mixture (★★)and knead until mixed.
  3. Divided meat mixture into 8 eqaul portions and shape into small patties. Heat 1 tsp oil in frying pan. Add burgers to pan and brown on both sides. Cover with lid turn heat to low and cook for 5 minutes or until done.Add ketchup or sauce on the side.
