【chicken, burdock and carrot rice】
*Ingredients* 300g(1 1/2 C) short-grain white rice. 200g( 7 oz) boneless chicken thigh 1/2 burdock(salsify), 1 nub ginger, ★2 tbsp each soy sauce, mirin, sake)
1.Rinse rice and soak for about 30 minutes.
2.Dice chicken into 1/2″ cubes. Peel burdock, shave into thin slices and soak in water for 5 minutes to remove bitterness. Drain. Peel and shave carrot into thin slices. Mince ginger.
3.Combine ingredients from step 2 in a bowl. Drizzle with mixture ★and let sit for 10 minutes.
4.Drain rice and add to cooker. Add water to 2 serving marker inside cooker (2 1/2 C water if usuing a pot). Add ingredients from step 3 and cook.
5.Once done, gently stir.
